I've run about 50 pounds of flour through this guy and it's been a pleasure. My old red 8 quart mixer used to get so hot you couldn't touch certain parts, and would groan as it kneaded heavy doughs. This mixer breezes through them with no effort at all, never even warms up, and kneads so much better that the bread is noticeably better. It works well on small batches too, the dough hook shape handles big and small batches equally well. The safety features work perfectly and the ability to set the timer to run for a fixed interval is an added plus.

It should come with instructions on how to use the mixer.

The three speeds you see are actually for each different type of paddle. If you follow that you will not get a flour dust up. It is heavy and needs its own space. Make sure it is not on the floor as you do not want to be bending over all the time. Get it where you can pick up the bowl and put ingredients in. The bowl gets heavy as the more ingredients bring on the weight. Makes baking and cooking so much faster by being able to do multiple batches at once.
