If the grid is higher than my gravel, is it possible to shorten the height? Either cutting before install or maybe using a heat gun to melt the excess?

You cannot melt with a hot air gun. If you really want to shorten the height, you can cut it before installation. If you don't have professional tools, it's not easy to cut the height neatly. Irregular cutting can also damage the overall performance of the product, such as tensile strength.
