Could this VEVOR Wall Mounted Stair Handrail be installed on plasterboard Gyprock wall? Thanks

Yes, but not by fastening directly to plasterboard (Gyprock) alone. For a safe installation, the handrail should be anchored into wall studs or suitable heavy-duty hollow-wall anchors that are rated for handrail loads. Stud mounting is the recommended option.
